One Cookie, Many Names: Mandelbrot, Mandel Bread, Mandelbrodt, Kamishbrot

Mandelbrot, mandelbrodt, mandel bread, mandelbread, kamishbrot, kamish bread, komish: these are all essentially the same cookie, a twice-baked Ashkenazi Jewish almond cookie. The different names come from different languages, regions, and a century of American respelling.

The almond names

Mandelbrot is the Yiddish and German root: mandel means almond, brot means bread. Almond bread. It is the name you will see in most cookbooks and food writing.

Mandelbrodt and mandelbrot with various spellings are the same word filtered through transliteration. Yiddish was written in Hebrew letters, so every English spelling is somebody's best guess. None of them is wrong.

Mandel bread is the American half-translation: keep the Yiddish almond, translate the bread. This is the name most American Jewish families use, ours included, and the one Grandma Jeanne wrote at the top of her yellow notebook paper.

The kamish names

Kamishbrot, kamish bread, and komishbroit are the Ukrainian and southern Russian branch of the tradition. Same twice-baked technique, same role on the table. The origin of kamish is debated, and families from Odessa will tell you kamishbrot while families from Poland say mandelbrot, sometimes about identical cookies.

If your grandmother said kamish bread and mine said mandel bread, our grandmothers were baking the same love in different accents.

Is there any actual difference?

Between the names, no. Between family recipes, endlessly. Some are heavy on almonds, some skip them entirely in favor of chocolate chips. Some slice thick, some thin. Some do a long second bake for a harder cookie, some keep it short. Ours comes out with a delicate crunch on the outside, softer on the inside, which is where a good mandel bread should land. The name on the tin never changed the cookie inside it.

One thing it is not

Mandelbrot is also the name of a famous mathematician, Benoit Mandelbrot, the father of fractal geometry. If you searched his name and found a cookie, we apologize, and also, stay: the cookie is excellent and considerably easier to understand than fractals.
